The Maschio dei Cavalieri winery digs its root deep into passion and tradition, two words that embody the true soul and the “heart” of the cellar.
The company was established in 1973 by Bonaventura Maschio, who transformed the century-old, family distillery into an avant-garde winery with cutting-edge technology and production processes. It is renowned for the quality of its Prosecco DOC (Controlled Designation of Origin) and DOCG (Controlled and Guaranteed Designation of Origin), and also for its elegant and distinct sparkling wines.
A calling par excellence which started, firstly, from its devotion to a region, amongst the hills and plains of the eastern Veneto region, and its raw materials. Our Maschio dei Cavalieri wines are produced from the processing of grapes that reveal the true “heart” of this production zone: the Glera grapes, used for our Prosecco DOC and Prosecco DOGC, Incrocio Manzoni in two interesting variants, its intriguing history and fascinating tastes, Pinot Grigio, Bianco and Nero, besides the red and lively Raboso.

THE HEART OF THE VINEYARD

The oenologists who create Maschio dei Cavalieri products have always worked with passion to enhance to the utmost the autochthonous vines lying east of the Veneto region. In this extraordinarily rich stretch of land we find the Glera grapes from which Prosecco DOC and DOCG are produced, as also the grand sparkling wines that come from renowned international grape varietals, such as Pinot Grigio, Bianco and Nero, which in this land stand for harmony and quality. In addition, we have the various Incrocio Manzoni versions, which are valued in our cellars as wines of great elegance.

This grape varietal, at the base of all the Prosecco DOC and DOCG, came from the Eastern Friuli area and spread throughout the centuries between the Veneto and Friuli regions. It best grows in the hilly zones where the climate is meek and airy, but manages to adapt itself also to the plains. Up to 2009 this grape varietal was commonly called Prosecco; with the onset of the Regulations for the protection of grape varietals, it began to be referred to as Glera, while the name Prosecco is now referred to the wine. The geographical production areas are divided into DOCG – Valdobbiadene, Conegliano, Colli Asolani and Montello – and DOC, which encompasses 4 Friuli provinces (Gorizia, Pordenone, Trieste and Udine) and 5 Venetian provinces (Belluno, Padova, Treviso, Venice and Vicenza).
The Glera grape varietal endows the wine with a pale straw yellow hue and a dry and light taste, delicately perfumed with typically floral notes that express the utmost in freshness and lightness.

Innovation is at the “heart” of quality in Maschio dei Cavalieri wines. It is a pursuit conducted with constancy, passion and profound know-how, applied to every winemaking phase, from the vineyard to the bottling.
An intense work in pursuit of the creation of our Prosecco and our unique and exclusive sparkling wines.
It is because we believe in change to achieve the best results for everyone: ourselves, our wines and the splendid Venetian territory which provides us with its fruits.

In Maschio dei Cavalieri, innovation and experimentation are the cornerstones of the entire production process.

We improve our winemaking techniques every day. The key players of our processings are low temperature, selected yeasts and the use of storage and bottling methods that are essential in enabling to pour only the natural perfection of our bubbles into the flutes of consumers worldwide.

It is thanks to this continuous work that over time we have been able to select the best raw materials, starting from the control of the supply chain. We duly choose the vines and grapes which can give us the ideal musts for the creation of our sparkling wines.
In the oenological field, technology is fundamental in achieving a quality that is always recognizable, and continuous research is essential in attaining improvements year after year, while remaining always faithful to our tradition.

SPARKLING PROCESS AND BOTTLING

In the “heart” of a Maschio dei Cavalieri bottle we find thousands of fine and light bubbles, produced by meticulous and precise production and sparkling techniques. In our cellars sparkling wines are not created with the classic double fermentation: for us just one is sufficient! In fact, we have a very strict rule: we process the musts and not the wines, since only this method allows us to keep the freshness and fragrance of the grape’s juice intact. With the help of our great ally, the low temperatures, the musts are clarified, chilled and immediately stocked at a controlled temperature. For the sparkling phase, our oenologists have at their disposal a base with an elevated organoleptic value. This is where the life of the sparkling wine starts; when ready, it goes on to the next phase, the bottling. For wine people like us, this is a fundamental and critical moment. In fact, we use special fillers, the so-called “isobaric machines”, which allow the filling of bottles to be done in a perfectly sterile environment: the product does not come in contact with the air. In this manner our Prosecco and sparkling wines preserve all the characteristic freshness and fragrance that were jealously guarded up to this stage.

In our cellars, the semi-sparkling and sparkling wines are not produced with the classic double fermentation but directly from the must. In this way sugars, which are the real containers of the grape’s aromatic properties, are never spent. The production process starts with the harvesting when the refrigerated tanks collect the newly pressed must from the wineries and transfer it to our cellars. Subsequently, the musts are clarified with physical and not chemical processing (cold processing, centrifugations and static decantation), refrigerated at 0°C and stocked at controlled temperatures, so that they are usable the whole year round without undergoing organoleptic alterations. They will then be picked little by little for fermentation. The fermented product is again refrigerated and stored under nitrogen inside the pressurized tanks. Here the carbon dioxide is trapped as the bubbles form, and the sugar residues remain unchanged.

We then proceed with bottling, a delicate phase for all sparkling wines. This is why in our cellars we use special fillers, the so-called “isobaric” machines, which allow the filling to be done in a perfectly sterile environment. In this manner, our wines maintain all the characteristic freshness and fragrance that were jealously preserved in every phase of production.

Prosecco DOC Treviso Extra Dry

Prosecco DOC Treviso is produced with the grapes from the “historic area” of the Designation, representing the best parts of the vast territory dedicated to the cultivation of Glera grapes.
Our winery obtains the sparkling wines directly from the must, subjected to prise de mousse (fermentation) with selected yeasts for a whole month at a controlled temperature of 12-15°C.
The prise de mousse is interrupted by lowering the pressure tank’s temperature to obtain the sugar level desired.

Prosecco DOC Frizzante BVS

The special feature of this bottle is the traditional twine that binds the driven cork.
The semi-sparkling Prosecco is one of the traditional wines of the area and this is the reason why we have retrieved this old type of packaging, which is normally used for wines that have a second fermentation in the bottle.

Prosecco DOC Treviso Magnum 1.5L

Wine with a light straw yellow color, with a very fine perlage and lively foam. Pronounced bouquet of candied fruit. On the palate it is clean, aromatic but gentle thanks to a natural residual sugar.

Prosecco DOC Rosé is obtained from Glera grapes with Pinot Nero (10-15%) fermented on the skins.

Particular attention is dedicated to the selection of basic musts for the production of this sparkling wine. The fineness of Pinot Bianco macerated on the skins is combined with the grit of Pinot Nero and Raboso, vinified without contact with the skins so as to obtain the lightest extraction of colour which makes it unique.
